Elgin - good to be back
My friend Sharon's home in Elgin Last week, I came to stay with Sharon and her family for two nights and I ended up staying for a week. I had forgotten how much I love this part of Scotland. Visited her in 2008 and I told her then that this is where I would like my home to be in.
In the night, the view is that of stars in the dark night skies. In the day, the view is that of greenery, hills and blue skies. Expanse of space. For a Singaporean like me, it is like being in the 'wilderness' if you know what I mean.
It's great to see you again Hank! He's a softie through and through. And very polite and well-trained too. A couple of days ago, he was eating his meal from his dish bowl. I walked past to throw something in the trash bin. We noticed that for a couple of moments, he 'grabbed' his food and started to eat them off a rug. When I walked away, he went back to his dish bowl. It isn't his usual behaviour to eat from the rug. Then I realised, he was giving me space to throw the stuff in the bin.
Michael and Sharon are such lovely people. They opened their hearts and home to me generously and unconditionally. Michael remembered that I mentioned that I wanted to see the stars. So here we are all dressed up warm and comfy to go outside to see the beautiful stars in the sky.
Had an egg the other morning and it was a double egg yolk! My friends told me that it means LUCKY. Nice!
Michael loves cooking and he enjoys Chinese food. I introduced Chicken rice to him and we decided to have that one evening. We had some leftover Chili con carne so I suggested making bergedels with it. He had great fun making it.
It was my first time making it too, with google it is easy to search for recipes. We used brown rice and it turned out delicious. They enjoy having rice and so I recommended that they buy a rice cooker. Michael bought it and we had Chinese the next evening too. He had a freshly caught rainbow trout from his dad and so we decided on a steamed rainbow fish trout with Cantonese dressing. We enjoyed that too, yummy.

Michael made some stewed apples and it was lovely on toast. A delicious breakfast.
Bought a pair of boots, very comfy and cheap too. Nice for walking around in this weather.
This holiday has been one of going with flow and I made a decision to be in Elgin for the rest of my stay in Scotland. Will continue to enjoy the unfolding of goodness. :)
